Ingredients:
- 1 cup rolled oats
- 1/2 cup almond butter or peanut butter
- 1/3 cup honey or maple syrup
- 1/4 cup wheatgrass powder
- 1/4 cup unsweetened shredded coconut
- 1/4 cup chopped nuts
- 1/4 cup dried fruit (such as raisins, cranberries, or chopped dates)
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions:
In a large mixing bowl, combine the rolled oats, wheatgrass powder, shredded coconut, chopped nuts, and dried fruit. Stir until evenly mixed. In a small saucepan, combine the almond/ peanut butter and honey/ maple syrup on low heat. Stir continuously to create a smooth mixture.
Remove from heat and stir in the vanilla extract and a pinch of salt. Pour this mixture over the dry ingredients. Mix until the dry ingredients are evenly coated with the butter mixture. Add little butter or honey if the mixture is very dry.
Line a baking dish with parchment paper and transfer the mixture into it. Press it firmly and evenly. Place the dish in the refrigerator for 1-2 hours or until firm. Now remove it from the refrigerator and cut it into bars. Store these wheatgrass bars in an airtight container.
