Turmeric Spiced Tofu Scrambles

Ingredients:

  • 1 block (14-16 ounces) firm or extra firm tofu, drained and pressed
  • 2 tablespoons olive oil or coconut oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon ground paprika
  • 1/4 teaspoon black pepper powder
  • Salt, to taste
  • 2 tablespoons chopped fresh cilantro or parsley (for garnish, optional)

Instructions:

Drain the tofu and place it between layers of paper towels and press gently to remove excess moisture. You can use a tofu press for best results. Once it is pressed, crumble it into small pieces using your hands or a fork. Set aside.

Heat olive oil or coconut oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant. Sprinkle the turmeric powder, cumin powder, ground paprika, and black pepper powder over the onions and garlic. Stir well to coat the aromatics with the spices.

Add the crumbled tofu to the skillet. Cook the tofu for 5-7 minutes, stirring occasionally, until it starts to brown slightly and crisp up. Add salt to the tofu scramble. Remove the skillet from the heat. Garnish it with chopped fresh cilantro. It makes a healthy breakfast dish perfect to serve with sala, toast or avocado.
