Turmeric Roasted Cauliflower and Chickpeas

Ingredients:

  • 1 medium cauliflower, cut into florets
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Lemon wedges (for serving)

 

Instructions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare Cauliflower and Chickpeas: In a large bowl, combine the cauliflower florets and chickpeas.
  3. Seasoning: Drizzle the olive oil over the cauliflower and chickpeas. Add the turmeric, cumin, coriander, paprika, garlic powder, onion powder, salt, and pepper. Toss everything together until the cauliflower and chickpeas are evenly coated with the spices.
  4. Roast: Spread the seasoned cauliflower and chickpeas in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is tender and golden brown, and the chickpeas are crispy.
  5. Serve: Remove from the oven and transfer to a serving platter. Garnish with fresh cilantro and serve with lemon wedges on the side for an extra burst of flavor.

Notes:

  • For added flavor, you can also add a pinch of chili flakes for some heat or a sprinkle of nutritional yeast for a cheesy flavor.
