Tomato Lentil Curry

Ingredients:

  • ½ cup red lentils (masoor dal)
  • 1 tomato, chopped
  • 1 tsp Garam Masala
  • ½ tsp Turmeric Powder
  • ½ tsp Kashmiri Red Chili Powder
  • 1 small onion, chopped
  • 2 cups water or broth
  • Salt and lemon juice to taste

Instructions:

Rinse the red lentils well, then add them to a pot with the chopped tomato, water and a pinch of salt. Bring it to a boil, then simmer until the lentils turn soft and creamy — about 15–18 minutes.

In a small pan, heat a drizzle of oil or ghee. Add the chopped onion and sauté until golden and fragrant. Sprinkle in Turmeric Powder, Kashmiri Red Chili Powder, and Garam Masala, stirring for 30 seconds to bloom the spices.

Pour this spiced onion mix into the cooked lentils and stir it all together. Let it simmer for another 2–3 minutes so the flavors mingle beautifully.

Squeeze in some fresh lemon juice and garnish with chopped cilantro (optional but highly recommended).

Best enjoyed with steamed rice or warm Indian flatbreads.
