Spicy Amla Tomato Sauce

Blend together the sour flavors of amla powder with strong flavors of garlic, ginger and other complementing spices to create a tempting sauce/

Ingredients:

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon amla powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon black pepper powder
  • 1 can (14 oz) diced tomatoes
  • Salt to taste
  • Chopped fresh cilantro (optional, for garnish)

Instructions:

  • Heat the olive oil in a saucepan over medium heat. Add to it the minced garlic and grated ginger, and sauté for 1-2 minutes until fragrant.
  • Stir in the amla powder, ground cumin, ground coriander, turmeric powder, and black pepper powder. Cook for another minute to toast the spices.
  • Add the diced tomatoes (with their juices) to the saucepan. Stir well to combine. Bring the sauce to a simmer, then reduce the heat to low.
  • Let it simmer gently for 10-15 minutes, stirring occasionally, until the sauce thickens slightly.
  • Season the sauce with salt to taste. Once the sauce is ready, remove it from the heat and allow it to cool.
  • Use the blender to blend the ingredients together. Garnish the sauce with fresh cilantro and serve.
  • This spicy amla tomato sauce pairs well with grilled chicken, pasta, and roasted vegetables.
