Roasted Vegetables with Black Peppercorn

Enjoy the goodness of vegetables and flavors of black pepper cooked together in this wonderful and healthy recipe.

Ingredients:

  • Assorted vegetables of your choice washed, peeled, and chopped into bite-sized pieces
  • 2-3 tablespoons olive oil
  • 1 teaspoon whole black peppercorns
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: minced garlic, herbs like rosemary or thyme

Instructions:

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or foil for easy cleanup. Crush whole black pepper coarsely in a mortar and pestle. In a large bowl, toss the chopped vegetables with olive oil. Add crushed black peppercorns, ground black pepper and salt. You can also add minced garlic and other herbs of your choice.

Spread a single layer of seasoned vegetables on the prepared baking sheet to have them roasted evenly. Place the baking sheet in the preheated oven for about 20-25 minutes, or until they are tender and golden brown. Once they are roasted, remove them and serve them.
