Ingredients:
- 2 tablespoons ghee or oil
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 teaspoons ginger-garlic paste
- 1 tablespoon amla powder
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon red chili powder (adjust to taste)
- Salt to taste
- 1 cup mixed vegetables
- 1 cup coconut milk
- Fresh cilantro leaves for garnish
Instructions:
Heat ghee or oil in a pan over medium heat. Add cumin seeds and sauté until they start to splutter. Add chopped onions and sauté until they turn translucent. Stir in ginger-garlic paste and sauté for another minute. Add chopped tomatoes to the pan and cook until they become soft and mushy.
Reduce the heat to low and add amla powder, turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for 2-3 minutes. Add mixed vegetables Stir to coat them with the spice mixture.
Pour in coconut milk and stir well to combine all the ingredients. Cover the pan and let the curry simmer over low heat for 10-15 minutes, or until the vegetables are tender. Adjust the seasoning and flavors once the curry is cooked. Garnish it with freshly chopped cilantro. Serve it with rice or flatbread.
