Ingredients
- 1 cup couscous (or millet/quinoa for gluten-free)
- 1 cup hot water or vegetable broth
- ½–1 tsp Ground Ginger or 1.5 tsp Ginger Cut & Sifted (steeped in broth)
- 1 tbsp olive oil or butter
- ¼ cup dried cranberries or raisins
- ¼ cup chopped toasted almonds or pistachios
- Zest of 1 orange
- 1–2 tbsp fresh orange juice
- Pinch of cinnamon (optional)
- Salt to taste
- Fresh mint for garnish
Instructions
Steep Ginger Cut & Sifted in hot broth for 5 minutes and strain. (If using Ground Ginger, whisk it directly into the hot broth instead.)
Pour the ginger-infused hot liquid over couscous, cover, and let it sit for 5 minutes. Fluff with a fork and mix in olive oil or butter. Add cranberries, toasted nuts, orange zest, orange juice, cinnamon, and salt. Toss well and garnish with fresh mint.
