Moroccan-Style Ginger & Orange Couscous

Ingredients

  • 1 cup couscous (or millet/quinoa for gluten-free)
  • 1 cup hot water or vegetable broth
  • ½–1 tsp Ground Ginger or 1.5 tsp Ginger Cut & Sifted (steeped in broth)
  • 1 tbsp olive oil or butter
  • ¼ cup dried cranberries or raisins
  • ¼ cup chopped toasted almonds or pistachios
  • Zest of 1 orange
  • 1–2 tbsp fresh orange juice
  • Pinch of cinnamon (optional)
  • Salt to taste
  • Fresh mint for garnish

Instructions

Steep Ginger Cut & Sifted in hot broth for 5 minutes and strain. (If using Ground Ginger, whisk it directly into the hot broth instead.)

Pour the ginger-infused hot liquid over couscous, cover, and let it sit for 5 minutes. Fluff with a fork and mix in olive oil or butter. Add cranberries, toasted nuts, orange zest, orange juice, cinnamon, and salt. Toss well and garnish with fresh mint.
