Mediterranean Roasted Vegetables with Spiced Oil

Ingredients

  • Carrots, potatoes, and cauliflower (or vegetables of choice)
  • Olive oil
  • Cumin seeds
  • Coriander seeds
  • Fennel seeds
  • Salt, to taste
  • Fresh herbs (optional)

Instructions

Preheat the oven to 200°C (400°F).

Warm olive oil gently in a small pan and add cumin, coriander, and fennel seeds. Let the spices infuse the oil for 1–2 minutes until aromatic.

Toss vegetables with the spiced oil and salt. Spread evenly on a baking tray and roast for 25–30 minutes until golden and tender.

Finish with fresh herbs if desired and serve hot.
