Licorice Loaf Cake

Ingredients:

For the Cake:

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon licorice root powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup sour cream

For the Glaze (optional):

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/4 teaspoon licorice root powder
  • 1/2 teaspoon vanilla extract

Instructions:

Preheat your oven to 350°F (175°C). Line a 9x5-inch loaf pan with parchment paper. Whisk together the flour, baking powder, baking soda, salt, and licorice root powder in a mixing bowl and set aside.

In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes. Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Mix in the vanilla extract.

Add half of the dry ingredient mixture to the butter and sugar mixture, mixing until just combined. Add the milk and sour cream, mixing until smooth. Add the remaining dry ingredients and mix until just combined. Be careful not to overmix.

Pour the batter into the prepared loaf pan and spread it evenly. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove the cake from the oven once it is done and let it cool in the pan for about 10 minutes. Transfer the cake to a wire rack to cool completely.

To prepare the glaze, in a small bowl, whisk together the powdered sugar, milk, licorice root powder, and vanilla extract until smooth. Adjust the consistency by adding more milk or powdered sugar as needed.

Once the cake is completely cool, drizzle the glaze over the top of the cake, allowing it to drip down the sides. Slice and serve it with a cup of coffee or tea.
