Prepare a wholesome meal with this sweet potato and black bean soup spiced with ginger.
Ingredients:
- 1 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tbsp ginger flakes
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 4 cups vegetable broth
- 2 large sweet potatoes, peeled and cubed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup diced tomatoes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions:
Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes. Add minced garlic, ginger flakes, cumin, and smoked paprika. Cook for another 1-2 minutes. Add vegetable broth, sweet potatoes, black beans, and diced tomatoes to the pot. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
For a smoother texture, use an immersion blender to partially or fully blend the soup. Alternatively, blend in batches in a regular blender.
Season with salt and pepper to taste. Garnish with fresh cilantro and serve hot.
