Ingredients:
- 1 tbsp olive oil
- 1 large onion, chopped
- 4 cups carrots, peeled and chopped
- 1 tbsp ginger powder
- 1 tsp garlic powder
- 4 cups vegetable broth
- 1 cup coconut milk
- Salt and pepper to taste
- Fresh parsley or cilantro for garnish
Instructions:
In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes. Stir in carrots, ginger powder, and garlic powder. Cook for another 2 minutes. Pour in vegetable broth, bring to a boil, then reduce heat and simmer until carrots are tender.
