Ginger Spiced Carrot Soup

Ingredients:

  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 4 cups carrots, peeled and chopped
  • 1 tbsp ginger powder
  • 1 tsp garlic powder
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions:

In a large pot, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes. Stir in carrots, ginger powder, and garlic powder. Cook for another 2 minutes. Pour in vegetable broth, bring to a boil, then reduce heat and simmer until carrots are tender.

Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches. Stir in coconut milk and heat through. Season with salt and pepper to taste.

Garnish with fresh parsley or cilantro. Serve hot.
