Ginger Pear Muffin

Ginger-Pear Muffins

Bake these ginger spiced muffins that have pears as the surprise.

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ginger powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • 1 large egg
  • 1 cup peeled and diced pear
  • ½ cup sour cream
  • 1 tsp vanilla extract

Instructions:

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.

In a medium bowl, whisk together flour, baking powder, baking soda, ginger powder, cinnamon, and salt.

In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the egg. Mix in sour cream and vanilla extract until well combined. Gradually add the dry ingredients and mix until just combined. Fold in diced pear.

Spoon the batter into the muffin tin, filling each cup about ¾ full. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
