Ginger Flavored Quinoa Salad

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1 cup chopped cucumber
  • 1 cup cherry tomatoes, halved
  • ½ cup red bell pepper, diced
  • ½ cup chickpeas (canned or cooked)
  • 1 tbsp ginger flakes
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1 tsp honey or maple syrup
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish

Instructions:

Rinse quinoa under cold water. In a medium saucepan, bring water to a boil, then add quinoa. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed and quinoa is tender. Fluff with a fork and let cool.

In a large bowl, combine chopped cucumber, cherry tomatoes, red bell pepper, and chickpeas.

In a small bowl, whisk together olive oil, lemon juice, ginger flakes, honey, salt, and pepper.

Add cooled quinoa to the vegetable mixture. Pour the dressing over the salad and toss to combine. Garnish with fresh parsley or cilantro and serve chilled or at room temperature.
