Crispy Sweet Potato Fritters with Herb-Yogurt Dip

Ingredients

For the Fritters:

  • 2 medium sweet potatoes, grated
  • 1 small red onion, finely chopped
  • 2 tbsp fresh parsley or cilantro, chopped
  • ½ tsp cumin powder
  • ½ tsp smoked paprika
  • ¼ tsp black pepper
  • Salt to taste
  • 2–3 tbsp flour or chickpea flour (to bind)
  • Oil for shallow frying

For the Herb Yogurt Dip:

  • ½ cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill or mint, chopped
  • Salt & pepper to taste

Instructions

In a bowl, mix grated sweet potato, onion, herbs, cumin, smoked paprika, pepper, salt, and flour.  Form small patties and set aside for 5 minutes to bind.

Heat oil in a skillet and shallow-fry the fritters until golden and crispy on both sides.

Mix yogurt, lemon juice, herbs, salt, and pepper to make the dip.

Serve the fritters hot with the refreshing herb yogurt.
