Ingredients:
- 2 cups grated carrots
- 1½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup neutral oil (such as avocado or vegetable oil)
- 3 large eggs
- 2 teaspoons cinnamon powder
- ½ teaspoon freshly grated nutmeg
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup chopped walnuts (optional)
Cream Cheese Frosting (Optional)
- 8 oz cream cheese, softened
- ¼ cup unsalted butter, softened
- 1½ cups powdered sugar
- ½ teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
In a bowl, whisk together flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
In another bowl, whisk sugar, oil, and eggs until smooth. Fold in grated carrots (and walnuts if using).Gradually combine wet and dry ingredients until just mixed.
Pour batter into prepared pan and bake for 30–35 minutes, or until a toothpick comes out clean. Cool completely before frosting.
For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, and whip until fluffy.
