This is a popular Indian curry loaded with goodness of proteins and amazing flavors.
Ingredients:
- 2 cups cooked chickpeas (or 1 can, drained and rinsed)
- 2 tablespoons oil
- 1 large onion, finely chopped
- 2 tomatoes, finely chopped
- 2 teaspoons ginger-garlic paste
- 2 green chilies, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon dry mango powder
- Salt to taste
- Fresh coriander leaves, chopped
- Lemon wedges for serving
Instructions:
In a large pan, heat the oil over medium heat. Add cumin seeds and let them sizzle. Add chopped onions and sauté until golden brown. Add ginger-garlic paste and green chilies, and cook for another minute. Add chopped tomatoes and cook until they become soft and mushy.
Add coriander powder, cumin powder, turmeric powder, garam masala, and salt. Cook for a couple of minutes until the spices are well incorporated. Add cooked chickpeas and a little water if needed. Let it simmer for 10-15 minutes to allow the flavors to blend. Add amchur powder and mix well. Garnish with fresh coriander leaves.
Serve hot with rice or naan, and lemon wedges on the side.
