Chicken and Rice Pilaf with Bay Leaf

This is a simple and healthy rice dish that makes a wonderful main course dish to have.

Ingredients:

  • 4 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and black pepper powder to taste
  • Chopped fresh parsley for garnish

Instructions:

Season chicken thighs with salt and black pepper.

In a large skillet, heat olive oil over medium-high heat. Brown chicken thighs on both sides until golden. Remove and set aside.

In the same skillet, add onion and garlic. Sauté until onion is translucent. Stir in rice, chicken broth, bay leaves, thyme, salt, and pepper. Bring to a boil.

Reduce heat to low, add chicken thighs back to the skillet, cover, and simmer for about 20-25 minutes, or until rice is tender and chicken is cooked through.

Remove bay leaves before serving. Garnish with chopped parsley and serve hot.
