Bay Leaf Powder Tomato Soup

A bowl of healthy and hearty soup spiced with bay leaf makes a fantastic dish to indulge in.

Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon bay leaf powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups vegetable broth
  • Salt and black pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sauté until translucent. Stir in the bay leaf powder, dried basil, and dried oregano. Add the crushed tomatoes and vegetable broth. Bring to a boil, then reduce the heat and let simmer for 20-30 minutes.

Use an immersion blender to purée the soup until smooth. Alternatively, transfer the soup in batches to a blender and purée. Season with salt and pepper to taste. Serve hot, garnished with fresh basil leaves if desired.
