Ingredients
- 1½ lb boneless chicken breast or thighs, cut into chunks
- 2 tbsp olive oil
- 1½ tsp cumin powder
- 1 tsp coriander powder
- 1 tsp coarse ground black pepper
- 2 cloves garlic, minced
- 1 tbsp lemon juice
- ¾ tsp salt
- Optional: bell peppers and onion chunks for skewers
Instructions
In a bowl, mix olive oil, cumin, coriander, black pepper, garlic, lemon juice, and salt. Add chicken pieces and toss until well coated. Marinate for 20–30 minutes.
Thread chicken (and vegetables if using) onto skewers.
Preheat grill to medium-high heat. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and slightly charred.
Serve warm with lemon wedges or a light yogurt dip.
