A wholesome, vibrant dish that satisfies whether served solo or as a sidekick.
Ingredients:

1 medium cauliflower (cut into 1-inch thick “steaks”)
 - 
2 tbsp olive oil
 - 
1 tbsp Kashmiri red chili powder
 - 
½ tsp cumin powder
 - 
1 tsp garlic paste
 - 
½ tsp smoked paprika (optional, for depth)
 - 
Salt to taste
 - 
2 tbsp yogurt (for basting)
 - 
Fresh cilantro + lemon wedges for garnish
 
Instructions:
Preheat oven to 200°C (400°F).
Mix olive oil, Kashmiri chili powder, cumin, garlic, paprika, salt, and yogurt into a paste.
Brush both sides of the cauliflower steaks generously with the marinade and place on a baking tray lined with parchment paper. Roast for 20–25 minutes, flipping once, until tender and slightly charred at the edges.
Garnish with fresh cilantro and serve with a squeeze of lemon.
