Ingredients
- 1 can (400 g / 14 oz) chickpeas, drained and rinsed
- 1 tbsp olive oil
- 1½ tsp garam masala
- ½ tsp smoked paprika (optional, for depth)
- Salt to taste
- 4 slices rustic bread (sourdough works great)
- 1 ripe avocado, mashed
- ¼ cup plain Greek yogurt
- Zest and juice of ½ lemon
- Fresh coriander (cilantro) leaves, for garnish
Instructions
Heat olive oil in a pan. Add chickpeas, garam masala, paprika, and salt. Sauté for 3–4 minutes, until the chickpeas are lightly crisp and fragrant.
Prepare the lemon yogurt drizzle by mixing the yogurt, lemon zest, and lemon juice until smooth.
Toast the bread slices until golden. Spread the mashed avocado evenly over the toast, then top with the warm garam masala chickpeas. Drizzle with the lemon yogurt and sprinkle with fresh coriander.
