Turn your summer up a notch with this refreshing fennel and cucumber cooler – a simple and soothing recipe that’s ready in no time!
Ingredients:
- 1 tsp fennel seeds
- 1 large cucumber, peeled and sliced
- 1-2 tbsp honey or agave syrup (optional, depending on sweetness preference)
- 1 cup chilled water
- Juice of 1 lime or lemon
- A few mint leaves for garnish
- Ice cubes (optional)
Instructions:
Lightly crush the fennel seeds using a mortar and pestle to release their aroma. In a small bowl, add 2-3 tbsp of hot water to the fennel seeds and let them steep for about 5 minutes. Strain and set aside.
In a blender, combine the cucumber slices and honey/agave syrup (if using), and blend until smooth.
In a large glass or pitcher, add the cucumber puree, fennel seed infusion, lime juice, and chilled water. Stir well to mix.
Add ice cubes to glasses and pour the cooler over the ice. Garnish with mint leaves and a slice of cucumber or lime.
